Applesauce with Calvados à la Didi

Ingredients for 1 servings:

  • 700 g apples
  • 50 g sugar
  • 7 g vanilla sugar
  • 1 pinch(s) cinnamon powder
  • 1 pinch of vanilla from the mill
  • 4 cl Calvados
  • ½ lemon(s), juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Squeeze the lemon and add the juice to a bowl of water. Peel the apples, halve them, and cut them into small pieces. Place the apple pieces in the lemon water to prevent them from over-browning. Mix the sugar, vanilla sugar, and cinnamon. Bring the apple pieces, the sugar mixture, and the Calvados to a boil and simmer over medium heat for about 20 minutes. When the apples are quite soft, puree them with a hand blender and season with vanilla extract. Transfer to bowls, arrange, and serve.
