Potato and leek soup

Ingredients for 16 servings:

  • 1 kg potatoes
  • 2 stalk(s) leeks
  • 2 liters of water
  • 1 tsp vegetable broth
  • Cinnamon
  • nutmeg
  • Salt
  • Herbs (e.g. chives and parsley)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Diet variant

Peel the potatoes and dice them. Boil the potatoes in water with a little salt and mash them. Meanwhile, wash the leek and slice it into thin rings. After mashing the potatoes, add the leek to the pot and season with the spices. Let the leek cook until done. Finally, sprinkle the herbs over the top.
