Ingredients for 4 servings:
- 500 g sauerkraut
- 150 g feta cheese
- 50 g crème fraîche
- 2 bell peppers, red
- 2 onions
- ¾ liter of water, hot
- ¼ liter wine, white, dry
- ½ tsp caraway seeds
- 2 cloves garlic
- pepper
- Salt
- olive oil
- Paprika powder
- Herbs, fresh as desired
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Peel and finely chop the peppers, onions, and garlic cloves. Heat oil in a casserole dish and sauté the onions. Add the sauerkraut, pour in hot water and the white wine, and simmer for 15 minutes. Then add the peppers and simmer for another 15 minutes. Season the soup with caraway, salt, pepper, and paprika. Add the crème fraîche and the diced feta cheese, bring back to a boil briefly, and serve. Serve with fresh herbs.
