Ingredients for 5 servings:
- 1 turkey breast (approx. 1 – 1.5 kg)
- Salt
- pepper
- 4 tbsp oil (olive oil)
- 12 sage leaves
- 3 sprigs rosemary
- 3 sprigs of thyme
- 200 ml wine, white, dry
- 1 liter of milk
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Preheat the oven to 180°C. Wash the turkey breast, pat dry, season with salt and pepper, and sear it all over in olive oil in an ovenproof roasting pan. Cut the sage leaves into strips and add to the meat, along with the needles from three rosemary sprigs and the leaves from three thyme sprigs. Sauté briefly. Deglaze with white wine and top up with the milk. Bring to a boil once, then place in the oven uncovered for approximately 70-100 minutes. Turn the meat halfway through. Remove the meat from the sauce after the cooking time. Blend the sauce with a hand blender until smooth. Side dish: Serve with pasta and a green or mixed salad. Tip: You can also use this method to prepare roast pork or rolled turkey. Roughly estimate the cooking time in the oven for about one hour per kg of meat.
