Ingredients for 6 servings:
- 250 g macaroni
- 2 eggs
- 100 g breadcrumbs
- 50 g flour
- 500 ml béchamel sauce see recipes in the database
- 100 g cheese (Fontal or Cheddar), freshly grated
- salt and pepper
- Oil for frying
Instructions
Working time approx. 1 hour; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours
First, prepare a béchamel sauce, add the grated cheese, and set the sauce aside. Cook the macaroni in salted water until al dente, then drain well. Add the still-hot macaroni to the sauce and mix well. Then spread everything on a platter and let it rest in the refrigerator for 1 hour. After about 1 hour, when everything has cooled, form the mixture into small croquettes and let them rest in the refrigerator for another 30 minutes. Then, coat the croquettes in breadcrumbs and fry until golden brown. Perfect as a side dish with meat, as finger food, or simply with salad.
