Fig French Toast

Ingredients for 1 servings:

  • 6 slices of white bread
  • 4 eggs
  • 60 ml milk
  • some vanilla sugar or pulp of a vanilla pod
  • 1 tsp cinnamon
  • Fat for frying
  • 5 figs
  • 3 tbsp honey
  • 1 tsp cinnamon
  • 100 g ricotta
  • 1 tbsp honey

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

An autumnal and delicious alternative to the classic version.

First, make the fig filling: Cut the figs into pieces, place them in a saucepan with the honey, and bring to a boil. Reduce the heat and simmer for about 10 minutes, until the figs begin to break down. They should still be slightly chunky. Season with cinnamon. Beat the eggs, milk, vanilla sugar, and cinnamon. Let the bread slices sit in the mixture for about 2 minutes, then fry them in a preheated pan with fat until golden brown on both sides. Mix the ricotta with the honey, spread it on the slices, and spoon the fig filling on top. Stack the slices on top of each other, garnish with fresh fig halves, and drizzle with a little honey.
