Ingredients for 4 servings:
- 2 slices of toast
- 200 g salmon, raw
- ½ lemon(s), organic
- ½ bunch chives
- 3 tbsp olive oil
- Butter, for frying
- Allspice d’Espelette
- Sugar
- salt and pepper

Using a cutter (approx. 5 cm in diameter), cut out 4 circles from the toast and fry them in butter until crispy on both sides. Cut the salmon into small cubes and coat with olive oil. Finely chop the chives, grate the zest from the lemon, and squeeze the lemon juice. Just before serving, mix all ingredients and season with spices. Return the cutter to the toast and spoon in the salmon tartar.
