Pears and beans with smoked tofu and savory

Ingredients for 4 servings:

  • 500 g green beans
  • 120 g onion(s)
  • 250 g smoked tofu
  • 750 ml vegetable stock
  • 400 g potatoes, waxy, small
  • 4 sprigs savory
  • 1 pear(s)
  • 1 tsp herbal vinegar, vegan
  • 1 tsp sugar
  • ½ bunch parsley
  • Salt and pepper, black, from the mill
  • 4 tbsp rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Wash and trim the green beans. Peel and wedge the onions. Slice the tofu. Chop the savory and parsley. Wash the pear, cut it into eighths, remove the cores, and peel it if desired. Heat the oil in a roasting pan, fry the tofu slices, and stir in the onions. Add the stock and simmer gently, uncovered, for 15 minutes. Peel the potatoes, stir in, and cook for another 10 minutes. Add the beans and savory and cook for another 5 minutes. Add the pears and cook for another 5 minutes. Season with vinegar, sugar, salt, and pepper, and stir in the parsley.
