Pretzel dumplings

Ingredients for 8 servings:

  • 8 rolls (pretzel rolls, approx. 500 g)
  • 200 g apples
  • 150 g chestnut(s), cooked
  • 1 bunch marjoram
  • 2 tbsp oil
  • 400 ml milk
  • 3 eggs, separated
  • 200 g cream
  • 1 shallot(s)
  • 1 tbsp sugar
  • 2 tbsp sauce thickener
  • Salt
  • pepper
  • nutmeg
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Dice the pretzel rolls, slice the chestnuts, chop the marjoram, and coarsely grate the apples. Mix everything together to form the dumpling mixture. Peel and dice the shallot. Heat the oil and sauté the shallots until translucent. Add the milk and season with salt, pepper, sugar, and nutmeg. Mix the liquid well with the dumpling mixture. Mix in the egg yolk and finally fold in the sauce thickener. Beat the egg whites until stiff and fold into the dumpling mixture. Pour the batter into a greased dish (e.g., a muffin tin or cake tin of your choice). Bake in a preheated oven at 180°C for approximately 25 to 30 minutes.
