Spice cake – generational recipe

Ingredients for 1 servings:

  • 125 g butter
  • 300 g sugar
  • 4 eggs, separated
  • 300 g flour
  • 125 g nuts, ground
  • 1 packet of baking powder
  • 2 tsp cinnamon
  • 1 pinch of clove(s), ground
  • 1 pinch of cardamom
  • 250 ml milk
  • 125 g chocolate, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

A generational recipe from my ancestors’ bakery……

Beat butter and sugar until fluffy. Beat in the egg yolks, one at a time. Combine the nuts with the flour, baking powder, and spices, and stir in alternately with the milk. Beat the egg whites until stiff and fold in the chocolate. Bake at 175°C for a good hour. It’s best to glaze with a thick layer of powdered sugar with rum or lemon juice. It keeps for many days (although it usually disappears much faster…) and tastes best around the third day.
