Shred the smoked tofu in a blender or crumble it with a fork. Fry it in a pan until crispy. Dice the onion, add it, and sauté until translucent. Mix the soy sauce, maple syrup, garlic powder, liquid smoke, and pepper in a small bowl and pour over the minced meat. Continue frying briefly until the liquid has evaporated. Finely dice the gherkin and mix it in a bowl with the minced meat, ketchup, and mustard. Roll out the rolls as thinly as possible. Place 1 teaspoon of melted cheese or cheese and 1 tablespoon of minced meat mixture in the center of each. Bring the dough edges together at the top and press shut. Place seam-side down on the baking sheet. Brush the rolls with oil and sprinkle with sesame seeds. Bake in the oven at 180°C for about 15 minutes and serve while warm.
