Kiwi, apple and grape compote with tonka bean sauce

Ingredients for 2 servings:

  • 2 kiwis
  • ½ apple
  • 20 grapes
  • 1 tbsp cornstarch
  • 100 ml water or apple juice
  • 2 tbsp coconut blossom sugar or more
  • 250 ml spelt drink or oat drink
  • 10 g starch flour
  • 20 g cane sugar or coconut blossom sugar
  • some tonka bean shavings

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel and dice the kiwis. Wash, core, and dice the apple. Wash and halve the grapes. Whisk the cornstarch with the water and sugar. Bring the fruit to a boil while stirring in the cornstarch mixture. Pour into glasses and let cool. Meanwhile, prepare the sauce. Whisk the cornstarch, sugar, and tonka bean zest into the drink and bring to a boil in a saucepan while stirring. Pour the sauce over the compote and serve.
