Ingredients for 60 servings:

  • 2 eggs
  • 2 egg yolks
  • 150 g powdered sugar
  • 250 g butter
  • 1 lemon(s), grated peel
  • 300 g flour
  • 2 egg yolks, for brushing
  • Sugar (granulated sugar), for sprinkling

Working time approx. 15 minutes; Total time approx. 15 minutes

Shortcrust pastry cookies with hard-boiled egg yolk in the dough

Hard-boil the eggs and strain only the yolks through a sieve. Combine the mixture with the fresh egg yolk, powdered sugar, softened butter, and lemon zest, then knead in the flour. Form the dough into a ball and let it rest in the refrigerator for at least 2 hours. Then shape the dough into walnut-sized balls and form them into ropes 1/2 cm in diameter and 14 cm long. Fold each ring together to form a wreath, place it on a greased baking sheet, brush with egg yolk, and sprinkle with sugar. Bake in a preheated oven at 200°C for about 15 minutes.
