Ingredients for 1 servings:

  • 1 papaya
  • 200 g soy quark (quark alternative)
  • 15 g coconut flour
  • 20 g sweetener (Xucker, light) or another vegan sweetener
  • 1 tsp, heaped drink powder (Unicorn Magic by PureRaw)
  • 1 tsp acai powder
  • e.g. fresh berries such as strawberries, blueberries, raspberries or blackberries
  • Quinoa, puffed, alternatively ground nuts, cocoa nibs, chia seeds, cookies or similar.

Working time approx. 15 minutes; Total time approx. 15 minutes

in a papaya boat with berries

Halve the papaya, remove the seeds, and peel if necessary. Place the papaya boats on a plate or similar. Mix the soy curd with the coconut flour and Xucker. Halve the mixture, mix each with the Unicorn Magic and acai powder, and fill the papaya halves. Wash and hull the berries, then cut them into bite-sized pieces. Top the colored protein curd with berries, quinoa, nuts, chocolate, and cookies to taste.
