Carrot pomace patties with chia seeds

Ingredients for 4 servings:

  • 300 g carrot pulp
  • 2 tbsp chia seeds
  • 6 tbsp water
  • 1 tbsp flaxseed meal
  • 1 tbsp sunflower seeds
  • 3 tbsp sesame seeds
  • possibly pumpkin seeds
  • some salt and pepper
  • curry powder
  • turmeric
  • Ginger
  • herbs to taste
  • e.g. coconut oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegan, egg-free, flour-free

Carrot pulp is the residue left over from juicing. Soak the chia seeds in 5-6 tablespoons of water for about 10 minutes, then combine all ingredients. Add spices to taste. Form the mixture into patties and fry in coconut oil.
