Zucchini burger

Ingredients for 2 servings:

  • 1 shallot(s) or onion
  • 1 garlic clove(s), possibly more
  • 1 m.-large zucchini
  • 4 tomatoes, dried in oil
  • 5 tbsp almonds, ground
  • 5 tbsp oat flakes
  • 5 tbsp wheat flour
  • 1 tbsp oregano, fresh or dried, finely chopped
  • 1 tbsp marjoram, fresh or dried, finely chopped
  • 1 tbsp thyme, fresh or dried, finely chopped
  • 5 tbsp vegetable broth
  • Sea salt and pepper, black from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

with dried tomatoes and spices

Preheat the oven to approximately 220°C (top/bottom heat). Peel and finely chop the shallot and garlic. Peel and grate the zucchini. Finely dice the pickled tomatoes. Mix the vegetables with the almonds, oats, and wheat flour. Stir in the herbs and vegetable broth and season with salt and pepper. Form the mixture into eight burgers with your hands and place them on a baking sheet lined with parchment paper. Place the burgers in the oven and bake for approximately 30 minutes, until golden brown.
