Ingredients for 2 servings:
- 250 g bacon cubes
- ¼ large onion(s), diced
- 1 tsp olive oil
- 1 pack of toast bread, 750 g
- 2 eggs
- 250 ml milk
- 200 g Cheddar cheese or Gouda, grated
- 2 tsp parsley
- 1 ½ tsp salt
- 1 ½ tsp pepper
- Parsley for garnishing
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
Preheat the oven to 180°C. Heat the olive oil in a small frying pan. Then fry the onion and bacon until the bacon is crispy. Remove from the heat and set aside. Cut the top off an 800g can of toast and use the can as a baking dish. Use the dish to cut out round pieces from the toast. Use a rolling pin to flatten the round pieces. Grease the muffin tins with a cloth and olive oil. Press the toast slices into the holes and bake for 3 minutes. Whisk together an egg, milk, and parsley and season with a pinch of salt and pepper. Spread the bacon mixture and onion onto the toast slices, then sprinkle with some cheese. Pour 1 tablespoon of the egg mixture over the top, sprinkle with more cheese, and return to the oven. Bake for 12-15 minutes, until the tops are lightly golden. Remove from the oven and let rest for 5 minutes, then remove from the muffin tin. Garnish with extra parsley.
