Warm vegetable pasta salad

Ingredients for 4 servings:

  • 400 g pasta (farfalle)
  • 250 g zucchini
  • 500 g cherry tomatoes
  • 250g mozzarella
  • ½ bunch basil
  • 1 sprig(s) lemon thyme
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar, white
  • 2 cloves garlic
  • 1 tsp sugar
  • Salt
  • black pepper, freshly ground

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook pasta according to package instructions until al dente. Dice the zucchini and fry in olive oil, allowing it to brown slightly. Cut the cherry tomatoes into eighths and dice the mozzarella. Roughly chop the basil, pick the lemon thyme leaves, and mince the garlic. Combine everything in a bowl. Season with salt, sugar, pepper, and balsamic vinegar, and adjust the seasoning to taste. Add the hot pasta and mix well. Serve while still warm.
