  • chives
  • onion(s), red
  • Olive oil, alternatively butter

I have deliberately omitted the quantities in this recipe, as you can adjust them to suit your needs. The recipe is primarily intended to show how easy they are to prepare. Carefully clean the chanterelles. Finely chop the onions and chives. Briefly fry the onions in olive oil and then immediately fry the chanterelles for about 3 minutes. Finally, add the chopped chives. Chanterelles cannot yet be grown commercially, so they can only be collected in the wild. I was able to find the first chanterelles in a light forest near us as early as the beginning of June. The season lasts from June to September, which gives you the opportunity to prepare these delicious mushrooms as a side dish to a fine game dish in the fall.
