Sauerkraut and potato pancakes with apple sauce

Ingredients for 2 servings:

  • 500 g potatoes
  • 150 g sauerkraut
  • 2 eggs
  • 2 tbsp flour
  • ½ bunch of spring onions
  • Salt and pepper from the mill
  • Clarified butter
  • 1 jar applesauce

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Finely chop the spring onions. Peel and coarsely grate the potatoes. Chop the sauerkraut slightly smaller. Blend the potatoes, sauerkraut, flour, eggs, and spring onions into a dough and season generously with salt and pepper. Heat the clarified butter in a pan, add the dough in batches to the hot oil, and fry the pancakes. Serve the sauerkraut pancakes with the applesauce.
