Vegetarian chicken schnitzel kebab

Ingredients for 2 servings:

  • 2 schnitzels (vegetarian chicken schnitzels), e.g. from Valessa
  • 2 pita bread(s) (kebab breads)
  • 2 slice(s) of Gouda or grated cheese
  • 1 Pepper
  • 1 tomato(s)
  • 4 mushrooms
  • ½ red bell pepper(s)
  • 1 onion(s)
  • 2 tbsp oil for frying
  • ½ tsp salt and pepper
  • 3 tbsp, heaped mayonnaise
  • ½ tsp sambal oelek
  • 2 tsp relish (cucumber relish)
  • 1 tsp ketchup

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Fry the schnitzels according to the instructions, then cut into strips. Preheat the oven to 180 degrees Celsius. Cut the kebab bread in half to allow for the filling. Fill with the cheese. Slice the onion and mushrooms, and strips of bell pepper. Slice the pepperoni and tomato. Fry the onions and peppers in oil in a pan, adding the mushrooms last, and season with salt and pepper. Keep warm until the schnitzel is cooked. For the sauce, take a bowl, mix the ingredients, and refrigerate. 5 minutes before the schnitzel is cooked, place the cheese-filled kebab bread in the oven until the cheese has melted. Once the cheese has melted in the kebab bread, remove it from the oven and carefully open it. Now comes the topping. First, add the pepperoni, then the schnitzel strips, then the fried vegetables, the tomato, and finally the sauce. Close the lid and serve warm.
