Shaggy ink caps on toast

Ingredients for 1 servings:

  • 0.33 stalk(s) leek
  • 1 tbsp oil
  • 4 mushrooms (shaggy ink caps)
  • 1 tsp vegetable stock powder
  • 2 tbsp nutritional yeast
  • some water
  • e.g. salt and pepper
  • 2 slices of whole-grain toast
  • e.g. parsley

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

quick, vegan, super tasty

Clean the leek, chop it finely, and fry it in hot oil. Dice the shaggy ink caps and fry them in the pan. Sprinkle with vegetable stock and nutritional yeast, fry briefly, and then add a little water. Simmer briefly until a creamy mixture forms. Season with salt and pepper. Toast the bread, then top the slices with the leek and mushroom mixture, sprinkle with some parsley, and enjoy. A green salad goes perfectly with this dish. Note: For the shaggy ink caps, use only young, white mushrooms. Remove any dark or pinkish spots before cooking.
