Strawberry curd à la Mamma

Spread the love

Ingredients for 4 servings:

  • 250 g strawberries
  • 1 packet of vanilla sugar
  • 1 shot of mineral water or lemonade
  • 1 tbsp rose water
  • 500 g quark

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

a delicious, light summer dessert

Wash the strawberries, remove the green parts, and halve them. Place them in a bowl and puree with a hand blender. Stir in the vanilla sugar and a dash of mineral water, or if you like it sweet, add a little lemonade. The carbonation is especially important here. This makes the quark light and fluffy. Add 1 tablespoon of rose water and the quark, mix everything thoroughly, and you’re done. The quark can, of course, be sweetened further depending on your personal preference and the ripeness of the strawberries used; for this, I recommend loose glucose.
