Leek and egg salad

Ingredients for 1 servings:

  • 2 stalk(s) leeks
  • 8 eggs, hard boiled
  • 1 can pineapple, drained
  • 8 tbsp pineapple juice (can)
  • 1 jar Miracle Whip

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the leek and peel the boiled eggs. Slice both. Cut the drained pineapple slices into chunks. Combine all ingredients in a bowl and mix well. Let it sit until ready to serve – ideally overnight. This salad tastes wonderfully fresh and is quick to make.
