Ingredients for 8 servings:
- 1,000 g beef, from the leg
- 750 g onion(s)
- 300 g smoked bacon
- 4 tbsp oil
- 1,000 g tomatoes, pureed
- ½ liter red wine
- ½ liter meat broth, clear (instant)
- 4 large bell peppers, green
- salt and pepper
- Paprika powder
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Rinse the beef, pat dry, and cut into cubes. Peel the onion, halve it, and slice it into thin rings. Dice the smoked bacon. Brown the meat all over in the oil, add the onion and bacon, and brown them as well. Season with black pepper, salt, and paprika. Add the passata, red wine, and stock. Bring everything to a boil and simmer over medium heat for 1 hour. Meanwhile, trim and rinse the bell peppers, and dice them finely. Add the bell peppers 15 minutes before the end of the cooking time. Finally, season generously with salt, pepper, and paprika! Serve with baguette.
