Pepper and kiwi salad with Icelandic cream cheese dressing

Ingredients for 2 servings:

  • 1 bell pepper(s)
  • 1 kiwi(s)
  • 2 tbsp Skyr
  • 2 tbsp water
  • 2 tbsp vinegar, mild
  • Sugar or sweetener
  • salt and pepper
  • 1 tsp herbs (chives, parsley, for example)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash, halve, deseed, and dice the bell peppers. Peel and dice the kiwi. Mix the dressing and season to taste. Mix everything together and serve.
