Ingredients for 1 servings:
- 15 Medjool dates
- 4 tbsp peanut butter
- 2 tbsp peanuts
- 100 g dark chocolate
- 1 tsp coconut oil
- 1 pinch(s) of salt, if desired
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Pit and halve the dates. Then place them in a baking dish or cake pan lined with baking paper or a baking mat. Cover the dates with another sheet of baking paper or a second baking mat and flatten them using a glass plate, a cutting board, or something similar to form a continuous surface. Then remove the top cover. Heat the peanut butter in the microwave, over a double boiler, or on the heater until liquid. Spread the peanut butter evenly over the dates. Roughly chop the peanuts and sprinkle them over the peanut butter. Melt the chocolate and coconut oil in the microwave, over a double boiler, or on the heater. Spread the melted chocolate evenly over the mixture in the dish. Optionally, sprinkle a pinch of salt over the chocolate layer. Let everything cool and then cut into ten bars with a sharp knife. Tips: The finished Date Barks will keep in the refrigerator for a few days. The recipe can be adapted as desired: after melting the chocolate, for example, puffed amaranth, cornflakes, dried fruit or other ingredients can be added to create your own version.
