Ingredients for 4 servings:

  • 2 cans of sardines in sunflower oil
  • 6 black olives
  • 1 small onion(s), red
  • 1 tbsp mayonnaise
  • 2 small eggs, hard-boiled
  • 8 slice(s) white bread, toasted
  • 1 tbsp parsley, finely chopped

Finely chop the olives and slice the onion into thin rings. Empty the contents of the cans of sardines into a bowl and shred finely with a fork. Stir in the mayonnaise to create a creamy consistency, then fold in the olives. Spread the sardine spread on the toasted slices of white bread and garnish with the onion rings. Place two slices of white bread with fillings on each plate, quarter the eggs, and divide them between the plates. Sprinkle each with a little parsley.
