Grandma Ellis's caraway soup

Ingredients for 4 servings:

  • 1 tbsp margarine
  • 3 tbsp caraway seeds, whole
  • 3 tbsp flour
  • 1.2 liters of vegetable broth
  • 3 lovage leaves
  • 2 slices of bread (rye bread)
  • some butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Heat the margarine in a saucepan. Add the caraway seeds and toast briefly. Add the flour and let it brown slightly. Deglaze with the stock and add the lovage. Bring the soup to a boil and simmer for about 20 minutes. Stir frequently and watch the soup closely, as it will boil over very quickly. Strain the soup through a sieve and serve. Cut the bread into small cubes and toast in a little butter in a non-stick pan. Serve the croutons as a garnish with the soup.
