Ingredients for 6 servings:
- 6 burger buns, best homemade, see database
- 200 g cucumber(s)
- 400 g Greek yogurt, firm
- 3 garlic cloves, very finely chopped or squeezed
- 2 tbsp olive oil
- 2 tsp lemon juice
- 2 tsp salt
- 1 tsp black pepper
- ½ head of white cabbage
- 1 m.-sized onion(s)
- 100 ml olive oil
- 125 g sugar
- 1 tbsp salt
- ½ tsp pepper
- 200 ml vinegar
- ½ liter of carbonated mineral water
- 1 carrot(s) (optional)
- 300 g minced pork
- 100 g minced beef
- 3 tbsp spice mix for gyros
Instructions
Working time approx. 1 hour; Rest period approx. 2 days; Cooking/baking time approx. 20 minutes; Total time approx. 2 days 1 hour 20 minutes
Prepare the coleslaw and tzatziki the day before. Bake the burger buns about 4 hours before eating. For the coleslaw, remove the outer leaves and stalk from the cabbage. Peel the onion and carrot (if you want to add them to the salad). Grate everything into a bowl using a coarse grater (food processor or by hand). Combine the sugar, salt, pepper, oil, vinegar, and sparkling water in a container and mix well until the sugar and salt have dissolved. Caution: Due to the sugar and carbon dioxide from the sparkling water, it will start to foam. Now pour the liquid over the vegetables and cover. Let it mature overnight. The salad can be left to marinate for up to 48 hours. Drain the liquid before serving, and the coleslaw is ready to eat. For the tzatziki, peel and grate the cucumber. Salt the grated cucumber and let it stand in the water for 10 minutes. Meanwhile, put the remaining ingredients in a bowl and mix well. Rinse the grated cucumber, squeeze out the water, and add the grated cucumber to the bowl. The tzatziki tastes best when it has been refrigerated overnight, but you can also eat it straight away. For the patties, put all the ingredients in a bowl and mix well. Form 6 patties (approx. 130g each). This works best in a patty press. Place them on baking paper and place in the freezer for approx. 2 hours. Then fry in a pan or on the grill until medium-hot. Cut open the buns. Spread tzatziki on the bottom and top halves (amount as desired), place the coleslaw on the bottom half (amount as desired), place the patty on top and the top part of the bun.
