Spinach on potato slices

Ingredients for 4 servings:

  • 600 g leaf spinach, fresh or frozen
  • 500 g potatoes
  • 1 garlic clove(s)
  • salt water
  • 2 onions
  • 20 g butter
  • salt and pepper
  • 200 g sheep’s cheese
  • 1 tbsp lemon juice
  • 4 tbsp olive oil

Wash the spinach thoroughly and blanch in boiling salted water for 1-2 minutes. Alternatively, prepare frozen leaf spinach according to the instructions. Rinse well and squeeze the water dry. Peel the potatoes, cut into thin slices, and blanch in boiling salted water for 5-7 minutes. Peel and mince the garlic. Peel and dice the onions, and sauté in the butter. Add the spinach and let it wilt. Season with salt, pepper, and garlic. Arrange the potato slices in a shallow baking dish, season, and top with the spinach. Chop the feta cheese and sprinkle it over the spinach. Mix a sauce from lemon juice, salt, pepper, and oil and pour it over the spinach. Place the baking dish in the preheated oven. Bake at 200-220°C on the second shelf from the bottom until the cheese is golden brown.
