Ingredients for 4 servings:
- 800 g potatoes
- 1 onion(s)
- 200 g cooked ham
- 100 g sour cream
- 1 cup wheat flour
- 3 eggs
- salt and pepper
- 1 pinch of nutmeg
- 125 g Emmental or smoked cheese, grated
- Clarified butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Wash and peel the potatoes, and grate them into a bowl. Drain well over a fine sieve, then toss with the finely chopped onions. Finely dice the ham and fold it into the mixture along with the sour cream. Add the flour and eggs, mix well, and season with salt, pepper, and nutmeg. Stir in the grated cheese. Heat the clarified butter in a pan, add the mixture to the fat in portions, press down lightly, and fry the fritters until golden brown on both sides. We like them best when we use smoked cheese instead of Emmental. Serve with a salad, and you have a delicious, uncomplicated, and inexpensive lunch.
