Hearty rice noodles with crispy bacon and Parmesan

Ingredients for 2 servings:

  • 125 g bacon cubes
  • 1 large onion(s), chopped
  • 120 g rice noodles (orzo)
  • 350 ml water
  • 2 tbsp sour cream or crème fraîche
  • 50 g Parmesan, grated
  • 2 spring onions

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Fry the bacon cubes in a pan for 4-5 minutes until crispy, then remove. Sauté the chopped onion in the remaining fat, then add the raw rice noodles and fry briefly. Add water, bring to a boil, and simmer on low heat for about 10 minutes, until the water is almost completely absorbed. Mix in the sour cream and Parmesan cheese. Sprinkle the bacon cubes and sliced ​​spring onions over the top, then season with salt and pepper.
