Puff pastry with spinach and smoked salmon

Ingredients for 4 servings:

  • 3 sheets of puff pastry
  • 450 g leaf spinach
  • Salmon, smoked, one layer
  • Parmesan, grated
  • 1 egg yolk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, top the puff pastry with spinach, then with salmon slices, roll up, and cut into 1.5 cm thick slices. Brush the edges with egg yolk to ensure the slices turn crispy brown during baking. Sprinkle with grated Parmesan cheese and bake at 200°C in a preheated convection oven for about 12 minutes.
