Sweet bread dumplings

Ingredients for 3 servings:

  • 150 g rolls, bread rolls or white bread (from the previous day)
  • 120 ml milk, warm
  • 30 g sugar
  • 3 pinches of cinnamon powder
  • 1 m.-sized egg(s)
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 m.-sized egg(s)
  • 1 tbsp sweet cream
  • 30 g almond flakes
  • 30 g breadcrumbs
  • 75 g butter
  • e.g. powdered sugar

Working time approx. 50 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 50 minutes

For the bread dumplings, heat the milk with sugar and cinnamon in a saucepan or in the microwave. Cut the bread rolls into cubes and pour the warm milk over them, briefly mixing the milk in so that all the bread cubes are moistened. Add the egg and knead everything with your hands until smooth. Let the mixture swell for about 30 minutes. In the meantime, bring lightly salted water to a boil in a suitably large saucepan and reduce the heat. With moistened hands, form 6 equal-sized dumplings (2 per person) and let the dumplings cook in the gently simmering water for about 20 minutes, turning the dumplings occasionally. Then remove from the water and drain on kitchen paper or in a sieve. For the breading, mix the breadcrumbs and flaked almonds in a deep plate and lightly crush them with your fingers. Whisk the egg, cream and vanilla sugar in another plate. Roll the drained dumplings first in the egg mixture and then in the breadcrumb mixture until they are coated all over, repeating the process if necessary. Heat the butter in a pan and fry the breaded dumplings until golden brown. Sprinkle with powdered sugar and serve. Serve with hot berries and a scoop of vanilla ice cream.
