Ingredients for 1 servings:

  • 500 g apples, sour
  • 3 tbsp lemon juice
  • 100 g brown sugar
  • 125 g pitted dates
  • 100 g walnuts
  • 2 tsp gingerbread spice
  • 1 tsp cocoa powder
  • ½ bag(s) of baking powder
  • 250 g flour
  • Fat and flour for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 3 hours 10 minutes

Peel, quarter, core, and thinly slice the apples. Mix in the lemon juice, then the sugar. Cover and let stand for one hour. Chop the dates. Mix them into the apples with a wooden spoon, along with the nuts, gingerbread spice, cocoa powder, baking powder, and flour. Pour the mixture into a well-greased and floured loaf pan. Bake in a preheated oven at 190°C (top/bottom heat 170°C) on the second rack from the bottom for 80 minutes. If necessary, cover after 50 minutes if it is getting too dark. Let cool in the pan for 20 minutes, then turn out onto a wire rack and let cool.
