makes about 50 chips
Place flour, butter, sugar, Parmesan cheese, egg yolk, milk, and salt in a bowl and knead with your hands until you have a smooth dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1 hour. Remove the dough from the refrigerator and divide it into 3 portions. Roll each portion into a sausage about 2 cm in diameter. Place poppy seeds on one plate, sesame seeds on a second plate, and Parmesan cheese mixed with paprika on a third plate. Now roll each roll in sesame seeds, poppy seeds, and Parmesan cheese. If you like, you can brush the rolls with egg yolk beforehand. The rolls need to be firm enough to cut, so either place them in the refrigerator or briefly freeze them. Once firm, cut into approximately 1 cm thick slices and place them on a baking sheet lined with baking paper. Bake in an oven preheated to 170°C (top/bottom heat) for 10 minutes. Of course, you can also use other seeds or spices; it’s a matter of taste. Also a nice souvenir from the kitchen.
