Ingredients for 3 servings:

  • 500 g cod fillet(s)
  • 100 g herb cream cheese
  • 80 g feta cheese in brine
  • 50 g goat’s cheese
  • 5 tsp, heaped panko or breadcrumbs
  • 3 tbsp, heaped fried onions
  • 1 tbsp, heaped parsley
  • 1 egg(s)
  • salt and pepper
  • herbal salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash the fish fillet, pat dry, and place in a baking dish. Sprinkle with pepper, salt, and herb salt. Prepare the breading in a bowl. Add the herb cream cheese, feta, goat’s cheese, and parsley to the bowl. Pour in the feta brine. Mix everything well until a smooth mixture forms. Now beat in the egg, stir in the fried onions, and panko. If necessary, add more panko until the mixture becomes thick. Spread the mixture over the fish in the baking dish. Bake everything in a preheated oven at 200°C (top/bottom heat) for 20 minutes. Then grill for another 5 minutes at 270°C (515°F). Serve with boiled potatoes, a garlic dip of your choice, and a dry white wine.
