Pollock fillet topped with tomatoes, onions, gherkins and cheese

Ingredients for 4 servings:

  • 800 g fish fillet(s) (pollock fillet)
  • salt and pepper
  • 3 tbsp mustard, medium hot
  • 3 tbsp tomato ketchup (spiced ketchup)
  • 250 g tomatoes, sliced
  • 250 g onion(s), diced
  • 250 g gherkins, cut into cubes
  • 250 g cheese, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the mustard and ketchup together, season the fish fillets with salt and pepper, and brush both sides with the mustard and ketchup mixture. Sauté the diced onions in a little oil until soft. Place the fish fillets side by side in a baking dish, then top with the tomato slices, sautéed diced onions, and gherkins. Finally, sprinkle everything with cheese. Bake at 180°C (fan oven) for 40 minutes.
