  • 60 g margarine or butter
  • 2 egg yolks

  • e.g. fat for the deep fryer

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

as from the bakery, makes about 23 pieces

Sift flour into a bowl. Add sugar, margarine or butter, 2 egg yolks, and a pinch of salt. Dissolve the yeast in the lukewarm milk and knead everything together until the dough pulls away from the bowl (add a little more flour if necessary). Let it rise in a warm place for about 30 minutes. In the meantime, peel, core, and finely dice the apples. Mix in the sugar and cinnamon. Roll out the dough on a floured surface into a rectangle approximately 60 x 35 cm. Distribute the apple cubes evenly over the dough and roll them up lengthwise. Cut into approximately 1.5 cm thick slices. Cover and let rise for another 30 minutes. Preheat the oil in the deep fryer. Depending on the deep fryer, fry 2-3 snails at a time until light brown on both sides. Immediately after frying, place the apple fritters in a sugar and cinnamon mixture and tap them lightly.
