Ingredients for 1 servings:

  • 500 tsp water
  • 750 g sugar
  • 5 tbsp lemon juice
  • 250 g flour
  • 100 g butter
  • 4 eggs
  • 1 tsp salt
  • 1 tsp sugar
  • Fat for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Make a syrup from water and sugar, season with lemon juice and simmer for a further 10 minutes. Skim off any foam. Allow to cool. Bring 250 ml of water to the boil in a saucepan. Sprinkle in the flour and mix everything well. Stir the batter over a low heat for 5 minutes, then allow to cool. Then gradually add the eggs to the batter and knead well. In the meantime, heat the oil in a saucepan. Pipe the batter into a piping bag fitted with a large star nozzle and into the hot oil. Cook for approx. 2-3 minutes; the cakes should be evenly browned on all sides. Remove the cakes from the oil with a slotted spoon, let them drain, and place them in the syrup. After 10 minutes, remove the cakes from the syrup and serve.
