Ingredients for 1 servings:

  • 500 g flour
  • 1 packet of dry yeast
  • 80 g sugar
  • 150 ml milk, lukewarm
  • 80 g butter, soft
  • 2 m.-sized eggs
  • 1 pinch of salt
  • 1 tsp lemon zest
  • 200 g jam
  • Fat for frying, approx. 1.5 kg
  • Powdered sugar for dusting
  • some water for brushing
  • Flour for the work surface

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 5 minutes

delicious New Year’s Eve doughnuts

Mix together the flour, yeast, sugar, and lukewarm milk. Let everything rise for about 30 minutes. Add the butter, eggs, salt, and lemon zest and knead everything together. Let it rise again for about 30 minutes. Roll out the dough on a floured surface until finger-thick. Cut out about 24 circles, each 8 cm in diameter. Place the jam in the center of 12 doughnuts. Brush the edges of the dough with water and place the remaining circles on top. Press the edges together, cover, and let rise for another 30 minutes. Heat the oil in a deep fryer or a tall saucepan. Fry the doughnuts until golden brown. Drain on kitchen paper and dust with powdered sugar. Makes about 12 doughnuts.
