Fine quark doughnuts

Ingredients for 8 servings:

  • 4 eggs
  • 500 g quark
  • 5 tbsp sugar
  • 1 tsp baking soda
  • 50 ml milk
  • 600 g flour
  • some sugar
  • Fat, for frying

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Mix the quark with the eggs and sugar. Mix the flour and baking soda and fold into the quark. Stir in the milk. Heat the oil in a deep fryer (160-170 degrees Celsius). Using a spoon, form the dough into small balls and fry them in the hot oil. The doughnuts will turn themselves over in the oil as long as there is enough space. Therefore, you shouldn’t bake too many at once. Depending on the size, they should be baked in the oil for 3-5 minutes until they have turned a light golden brown. Toss the doughnuts in the sugar immediately after frying. Tip: These doughnuts taste especially good if you add a little cinnamon to the sugar for turning! Best served warm.
