Ingredients for 8 servings:

  • 1 liter of milk
  • 125 g semolina (soft wheat semolina)
  • 3 tbsp sugar
  • 1 vanilla pod(s), if desired

Basic recipe without egg that can be expanded as desired

Bring the milk and sugar to a boil, stirring occasionally. Remove the pan from the heat. Slowly add the semolina while stirring constantly, and bring back to a boil. This is easiest with an electric mixer. You can enjoy the pudding warm or pour it into molds that have been rinsed with cold water, cover them (e.g. with cling film), and place them in the refrigerator. With a little help from a knife, the cooled semolina pudding can be easily turned out. If you like vanilla semolina pudding, you can also split open a vanilla pod, scrape out the seeds, and bring the pod to a boil with the milk and sugar before you start cooking the pudding. Remove the pod from the milk before adding the semolina.
