Oatmeal Apple Cake

Ingredients for 1 servings:

  • 500 g oat flakes, fine, gluten-free
  • 2 tsp baking powder, gluten-free
  • 2 tsp cinnamon powder
  • 100 g butter
  • 400 ml milk or oat milk
  • 150 g apple puree
  • 170 g honey
  • 2 eggs
  • 6 apples
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Melt the butter and let it cool slightly. Meanwhile, finely grind 250g of oats in a blender and mix with the remaining oats, baking powder, cinnamon, and salt. Mix the cooled butter with the milk, apple puree, honey, and eggs. Add the oat mixture and stir everything into a smooth batter. Spread the batter on a baking sheet lined with baking paper. (Mine measures approximately 29 x 40 cm.) Peel, quarter, and core the apples. Make several slits lengthwise along the rounded sides of the quarters and press them evenly into the batter. Bake the cake for approximately 45 minutes at 200°C (top/bottom heat). If desired, sprinkle with powdered sugar after it has cooled. Cut the cake into 24 slices.
