Ingredients for 2 servings:

  • 3 eggs
  • 1 shot of milk
  • salt and pepper
  • Chili powder or cayenne pepper
  • 4 slices of toast
  • e.g. butter
  • 2 slices of cheddar cheese
  • 4 slice(s) cooked ham, good quality
  • e.g. cranberries

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

for when you’re really hungry in between

Crack the eggs into a shallow bowl with a splash of milk and beat with a fork until light and fluffy. Season with salt, pepper, and a little chili. Place the slices of toast, one at a time, in the egg and let them soak in the water. Prick them a little with a fork to ensure the egg penetrates properly and the toast is properly soaked. Don’t leave them in the pan for too long, or they’ll fall apart. Remove the toast and place them on a plate. Melt 1 tablespoon of butter in a non-stick pan. The butter should be hot, but not dark. Place 1 slice of Cheddar cheese and then 2 slices of ham on one of the slices of toast. Fold it over so that nothing sticks out. Place a second slice of toast on top and place the sandwich in the pan. Let it brown for a few minutes on one side, then briefly cover with the lid to allow the heat to build up and the cheese to melt. Let it sizzle for another 2 minutes. Then flip it over and repeat with the remaining toast. Add more butter to the second sandwich if necessary. Serve on a plate. Enough for two sandwiches, so it’s enough for two people or one very hungry person. A dollop of something sweet, like cranberry or wild berry jam, goes perfectly with it.
