Baked turkey strips with artichokes

Ingredients for 3 servings:

  • 400 g turkey breast
  • 1 garlic clove(s)
  • 1 jar artichoke hearts
  • 4 tomatoes
  • 1 tbsp lemon juice
  • 200 g mozzarella, grated
  • 6 leaves of fresh basil, cut into strips
  • Herbs of Provence
  • Salt and pepper from the mill
  • olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cut the turkey breast into strips and brown. Add the crushed garlic and season with salt, pepper, and Provençal herbs. Drain the artichoke hearts well and quarter them. Peel the tomatoes and cut into large cubes. Arrange the turkey strips, artichokes, and tomatoes in a shallow baking dish. Drizzle with 1 tablespoon each of olive oil and lemon juice and top with basil strips. Sprinkle with mozzarella and place in the oven. Bake for 25-30 minutes at 180°C (fan oven).
