Baked potato with garlic

Ingredients for 2 servings:

  • 4 large baked potatoes (floury potatoes)
  • 2 cloves garlic
  • 8 tbsp olive oil
  • 100 g cheese, grated
  • 1 bunch of chives
  • salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes

Ideal as a vegetarian main course or as a side dish to a nice piece of meat.

It is advisable to choose floury potatoes, as they will need to be mashed slightly with a cup before baking. A variety that is too firm will simply break into solid pieces. Cook the potatoes unpeeled as usual for around 30 minutes until completely cooked. Meanwhile, mix the oil with the crushed garlic in a small bowl. Finally, season the oil with salt and pepper to taste. Line a baking tray with baking paper and arrange the pre-cooked potatoes on top. Now each potato needs to be mashed slightly. The bottom of a cup is a good option for this. Don’t mash the potatoes completely, just enough so that they look as if they are blooming. Now drizzle each potato with the previously prepared garlic oil and sprinkle with grated cheese. Bake the potatoes in a preheated oven at 200°C for 30-40 minutes, until the cheese is the desired color. Sprinkle the potatoes with freshly chopped chives and serve.
