Tortellini – tomato soup

Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 2 tbsp oil
  • 8 m.-large tomato(s)
  • 2 packs of tomato puree (500g each)
  • 200 ml vegetable broth (instant)
  • 200g tortellini
  • Salt
  • pepper
  • 2 zucchini (300g each)
  • 200 g turkey breast (in one piece)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the onions and fry in hot oil. Chop the tomatoes. Add them with the tomato puree and broth, and simmer for about 15 minutes. Cook the tortellini in boiling salted water according to the package instructions. Slice the zucchini. Finely dice the meat. Season with salt and pepper. Add the zucchini and meat about 5 minutes before the end of the cooking time and cook. Season the soup with salt and pepper, add the tortellini to the soup, and serve.
