Chicken breast with mango sauce

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • salt and pepper
  • 8 basil leaves
  • 4 slices of Parma ham
  • 2 tbsp olive oil
  • 1 mango(s), ripe
  • 1 tbsp butter
  • 1 tbsp sugar
  • 2 tbsp vegetable broth
  • 4 tbsp cream
  • 1 tsp lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the chicken and pat dry with kitchen paper, then season with salt and pepper. Top each fillet with 4 basil leaves and wrap each with 2 slices of Parma ham. Heat olive oil in a non-stick pan and sear the meat over medium heat for 2-3 minutes on each side. Then cover and cook over low heat for 3-4 minutes on each side. Meanwhile, peel the mango, separate the flesh from the pit, and roughly dice. Melt the butter in a saucepan, sauté the sugar and mango cubes for 2-3 minutes. Add the vegetable stock, cream, and lemon juice, and cook for 3-4 minutes. Then puree until smooth. Season the mango puree with salt and pepper and serve with the chicken breast fillets.
